Yes you CAN get Chicken spare ribs, just ask your poultry guy if you’re not sure. They are tender little chicken pieces that have a single bone down the centre. They can be eaten all in one go, then just glide the bone right back out. Delicious..!
INGREDIENTS
- 12-15 Chicken Spare Ribs
- 2 tbls tomato paste
- 1 tsp chilli flakes
- 1 tsp sweet or smoky paprika
- 1/2 tsp cayene pepper
- 1/4 cup of olive oil
- Juice of half a lemon
- Salt & Pepper
METHOD
Combine all ingredients except the chicken to form a paste like consistency. In a bowl, smother the chicken pieces in the paste and massage into the chicken. Wrap with plastic & leave in the fridge to marinate for 1-2 hours.
BBQ PREP

Loosely pack a Chimney with briquettes & leave burning until white-hot. Then spread evenly over your BBQ for a medium direct heat.
COOKING
Place chicken pieces directly over coals, heat should be a medium intesity not raging hot. Cook for 15 minutes turning every couple of minutes. Remove once you’ve developed a nice char & chicken is cooked through.
Serve hot!
